Focus on Listeria species

Listeria monocytogenes is a widespread bacteria, present in the soil, sewage, or faecal matter. Its ability to form listerial biofilms on contact surfaces makes it difficult to eliminate.
This pathogen can cause serious food poisoning and is therefore frequently isolated in food processing facilities to avoid food contamination. Contamination can occur at all steps of the food manufacturing chain from raw materials to place of consumption. Four categories of “Ready to eat food” (diverse categories of food which are prepared and stored in different ways and under different conditions) can be contaminated such as: milk, ice cream, smoked fish and cured meat products.
According to the WHO*, the mean risk of cases of illness per 10 million people per year is respectively: 9.1; 0.012; 0.46; 0.00066. For fast food released onto the market, it is important to rapidly distinguish this pathogen from other harmless Listeria species such as L. ivanovii, L. innocua.
